Imperial ceremonial grade — Yame, Fukuoka
Our flagship: a stone-ground first-harvest matcha from Yame in Fukuoka prefecture. Yame accounts for less than four percent of Japan's matcha crop, yet has for decades held the highest concentration of award-winning tea gardens. The leaves are shaded for around four weeks before picking, sorted by hand, and then ground on granite mills to a powder of roughly five micrometres. The result is a deep jade green, a dense and creamy texture, and an umami profile without any bitterness.

Origin
Why Yame and not Uji
Uji near Kyoto is Japan's best-known matcha region — and for exactly that reason the most industrialised. Yame lies some 900 kilometres to the south-west in a river valley where dense morning mist shades the tea plants naturally, before any netting is used at all. That additional natural shading raises the L-theanine content and is why Yame gyokuro and Yame matcha are regularly decorated at Japanese tea competitions. We import directly from a third-generation family estate, with no middlemen.
